Andrew Forsythe with juvenile kingfish. NIWA has identified kingfish as an ideal aquaculture species: it grows quickly – reaching a marketable size of three kilograms in 12 to 15 months. Its excellent flesh quality lends it to whole fillets, sushi and highly-valued sashimi.
